FOR BROWNIE:.
- PREHEAT oven to 350º F & grease 9-inch-square baking pan.
- MICROWAVE 1 C semi-sweet chocolate chips in small, uncovered, microwave-safe bowl for 45 seconds; STIR.
- Chocolate chips may retain some of their original shape; if necessary, microwave at extra 10- to 15-second intervals, stirring just until smooth; cool to about room temp.
- COMBINE:
- 1 1/4 C flour, 1/2 tsp baking powder & 1/2 tsp salt in small bowl and set aside.
- Beat 1 C sugar, 1/3 C softened butter & 1 tsp vanilla extract in medium mixer bowl until creamy.
- Add 2 large eggs to sugar mixture; beat until light & fluffy then beat in melted chocolate chips.
- Stir in flour mixture until mixed
- Then stir in 1/3 c frozen raspberries, mashed & spread into prepared baking pan.
- BAKE for 25 to 30 mins or until wooden pick inserted in center comes out slightly sticky & then cool completely in pan on wire rack.

- FOR RASPBERRY MOUSSE:.
- CHOP 2/3 C semi-sweet chocolate chips into roughly 1/4-inch pieces. (Just chop them up like you would green onions)
- Beat 1 (8 oz) package cream cheese, softened, 1/2 tsp vanilla extract & 6-7 drops red food coloring, & 3/4 C powdered sugar, in medium mixer bowl until creamy then fold in 1/4 C frozen raspberries, again mash 'em up, and add the sliced chocolate chip morsels.
- In yet another bowl BEAT 1/3 c whipping cream until stiff peaks form.
- Fold cream into raspberry cream cheese mixture until mixed & then spread mousse over cooled brownie.

- Refrigerate for 1 hr & cut into bars to serve.

And to make them even MORE delicious: (sorry no picture with this)
In a saucepan over medium heat, combine 1 (14 ounce) can sweetened condensed milk and 1 C chocolate chips. Cook, stirring constantly, until the chips are melted and the mixture is smooth. Do not allow it to bubble. Remove from the heat and stir in 1 tsp vanilla.
To serve, I spooned a pile of this in the bottom of a cereal bowl, placed the raspberry brownie mouse on top, and then drizzled with more chocolate! Oh baby yummy! This topping can be cooled and reheated in the microwave, just like hot fudge!
